Just like any other Indian girl, as I was growing up in the comforts of my home with my parents and my sister, I hardly visited the kitchen. Neither did my mom ever want me to until the day my travel to US as a grad student was fixed. That's when my mom started to get worried, as I knew nothing but to make tea and fry an egg. Well that doesn't really count as cooking, now does it?

It was when I came to Amherst, Massachusetts, in 2007 that I started to cook. I remember buying a cauliflower for the first time and calling up my mom immediately and asking her- what do I do with it? How can I cook it like you do? Honestly speaking, it did not turn out anywhere close to hers. Then, three years later when my sister visited me in Amherst, I made "chingrir malai curry (Shrimp in creamy coconut milk sauce)", and after taking her first morsel she said "ekdom maa-er moto hoyechhe (just like mom's)". That's the best compliment I ever had. I was so proud of myself. Since then, I have grown more and more passionate about cooking! I love to try new food, food from any part of the world, which sometimes did put me in trouble, but I'll never stop!

My husband is my food taster, critic and the judge. He had suffered from my bad cooking and has also appreciated my good (more often nowadays) cooking. He inspires me to be creative with food.

Over the years, I have learnt from my mom that food does not have to be complicated. Simple recipes with few ingredients and the ideal spice mix can do wonders. Whenever I come across recipes that ask for many ingredients, most of the time I would start looking for something simpler. "Happily spiced" has such recipes that are simple and easy. Anyone (who has never cooked before) can make them and enjoy a wonderful and delicious meal.
